Africa nearly 6 years ago..

I have been wanting to share these photographs for a long time, and have only just realised now is a better time than never.
My trip to Africa was one I will never forget. A 10 hour drive through township from Kampala to Biwindi National Forest. Lush as lush, and happy as ever where the locals, with natural green pastures and friendly faces smiling and welcoming us like whisps of fresh air. The abundance of photographic moments was phenomenal. I was totally out of my comfort zone, and so totally in awe. What amazing people and tribes, Uganda is definitely a country I would love to visit again...

Was it Wednesday night you said dinner?







Eggplant, zucchini sliced and layered on a baking tin, with chicken breast, thyme, chermoula, garlic cloves. Bake for 20 mins, fan force. In the last 5 mins, sprinkle over the top sliced spring onion, and bacon (optional), with a few blood red cherry tomatoes thrown on top. Continue baking for an additional 5 mins.
Whilst waiting, poor yourself a nice glass of Pinot Noir. I chose Racer & Rascals 2009 Yarra Valley.
Prepare mixed rocket & spinach leaves. Slice fennel and combine ingredients with lime juice and oil. Serve as a side dish.
